Mint Potato Rice Recipe : It is mint rice made of fragrant basmathi rice. No need for any side dish. If preferred serve with raita.
Note : In this recipe, you can also add veggies like peas, carrots, beans to make the dish more healthier. usually I add both peas & potatoes. but choice is yours !!

Ingredients Pudina Rice:
Basmati rice : 2 Cups
Potatoes : 2
Green Peas : 1 Cup
Green chillies : 5
Mint leaves : 2 Bunch
Lemon Juice : 1 tsp
Coriander Leaves : 1 Bunch
Ginger & Garlic Paste: 1 tsp
Cumin seeds : 1 tsp
Salt : To Taste
Oil : 4 tsp
Basmati Rice : Wash & Soak it for about 10 Mins and cook with the salt
Mint Leaves : Pluck & Wash and drain them
Green Chilli : Chopped
Potatoes : Peel and cut into cubes
Coriander Leaves : Chopped
How to Cook Mint Potato Rice Recipe:
Heat little oil in a pan over medium flame.
Add the ginger garlic paste, cumin seeds and green chillies stir fry for 2 Mins.
Add the mint leaves and cook until the leaves start to wilt.
Remove the pan from flame and let it cool the mint leaves.
Add the coriander leaves, mint leaves and grind together to make a smooth paste.
In a separate pan, heat little oil and stir fry the potatoes 5 Mins. Add salt and red chilli powder and green peas cook for more 5 Mins.
Add this mixture to the rice and mix well and cook until the potatoes are tender and cooked.
Serve hot mint potato rice with raita.
The dish is ready to eat !!
